Ingredients:


  • 1 red chilli

  • 1 red onion, (finely chopped)

  • 2 chicken breasts (grilled or cooked to preference, sliced or shredded)

  • 1 tbsp cooking

  • 200g baby mushrooms, halved

  • 1 garlic clove, chopped

  • 1 tsp Cajun seasoning (adjust to taste for more or less heat)

  • 200g black beans, drained and rinsed

  • 1 ripe avocado, chopped

  • 2 large eggs (optional for extra protein)

  • Lime wedges (for serving)

  • Salt and freshly ground black pepper, to taste

Method:

  1. Prep the Ingredients: Start by slicing half of the chilli into long thin strips and setting it aside for garnish. Finely chop the other half for a spicy base flavour. Chop the red onion, mushrooms, and garlic. If you haven't cooked your chicken breasts yet, grill or pan-fry them until fully cooked, then slice or shred.

  2. Cook the Mushrooms: Heat the rapeseed oil in a large frying pan over medium heat. Once hot, add the halved mushrooms and sauté them for about 5 minutes, or until they turn golden and slightly crisp around the edges.

  3. Add the Flavours: Stir in the chopped chilli, garlic, and Cajun seasoning, allowing everything to cook together for another minute until the spices become fragrant. Then, toss in the black beans and stir gently for about 3-5 minutes until they are heated through. Season with salt and freshly ground black pepper to your taste.

  4. Assemble the Hash: Divide the mushroom mixture evenly between two bowls. Layer on the sliced or shredded chicken, top with a fried egg, and finish with creamy chunks of avocado and a few slices of the reserved chilli strips.
