This makes a great breakfast or lunch and only takes 20 minutes!

Serves 2
Ingredients:
1 tbsp olive oil
1 onion, chopped
1 chilli, chopped
1 tsp turmeric
1 garlic clove, chopped
2 tbsp coconut milk
100g spinach
Seasoning
2 poached eggs
100g millet
Method:
Bring two pans of water to the boil. In one, add the millet, in the other prepare the poached eggs (I use a poaching pod, but feel free to poach in your own style.) The millet should take 10 minutes, once the water has boiled.
In another pan, add the olive oil and heat on medium, then add the onion, garlic and chilli. Once softened add the turmeric and coconut milk, this needs to be heated through then add the spinach, once wilted remove from the heat and season to your taste.
Make sure you keep an eye on the millet and the eggs, this should all be ready about the same time. Plate up the millet first, you could use a ring to shape the millet, then top with the spinach mix and finally add the poached egg to the top.
If you don’t have any millet, then you could substitute Brown Rice, Quinoa, Barley or any grain. Did you know that millet is gluten free!
