We visited an excellent local Mexican restaurant recently and one of the side dishes was a delightful sweetcorn salsa. I wasn’t cheeky enough to ask for the recipe, so here’s one I hope you will try. If you are vegan, simply remove the cheese.
It makes a great side dish to a Chilli or as an alternative salad. Serve with roast chicken, fish, turkey, steak, fish or whatever tickles your fancy. Or, simply eat on it’s own.
Preparation time: 10 minutes
Cooking time: 5-8 minutes
Ingredients:
10 cherry tomatoes, chopped
200g frozen sweetcorn, defrost and cooked
½ red onion, finely chopped
¼ cucumber, seeds removed and chopped
1 avocado, stone removed, peeled and chopped
1 chilli, chopped and seeds removed
100g coriander, chopped
Handful of mint leaves
1 lime, juice and zest
100g feta cheese, diced
Method:
Defrost the sweetcorn and cook, either on the hob or in the microwave, run under cold water to cool the sweetcorn, then place tomatoes, sweetcorn, onion, cucumber, avocado, chilli, coriander, mint and lime into a bowl, season to taste then mix well. Then sprinkle the feta on top.

The aroma of the herb helps activate the salivary glands in your mouth as well as the glands which secrete digestive enzymes, facilitating digestion.
It can sooth the stomach in case of indigestion or inflammation.

Menthol oil can help alleviate nausea related to motion sickness.
