Hydrating Lemon Chia Seed Breakfast

This is an easy favourite breakfast recipe that I have been using for years. It's a great overnight oats substitute, it's carb-free, refined sugar-free and gluten-free, it can also be dairy-free if you use a milk substitute. I use coconut milk in this recipe, but you could choose your favourite, or what you have in the cupboard.




Lemon Chia Seed Breakfast


Ingredients

  • 1 1/2 cups coconut milk (or substitute to your liking)

  •  ½ cup whole chia seeds or ground chia seeds (suggest you soak the whole chia seeds for 30 minutes first, )

  • 1 tbsp maple syrup or other sweetener such as honey

  • 1 tbsp poppy seeds, or more if you like

  • Zest of ½ lemon (take the zest before you juice it, it's easier)

  • Juice of ½ lemon

  •  ½ teaspoon pure vanilla extract

  • ¼ teaspoon ground cardamom

  • 2 pinches coarse sea salt


How to make:

Mix all the ingredients together and pour into a jar or glass container and place in the refrigerator for at least 4 hours or overnight to gel. Stir or whisk a few times within the first hour to help it gel evenly.


Serve and enjoy. I often serve with fruit, nuts, or some homemade granola, I try to use un-processed wherever I can.
